Some advice on hanging game from a hunter called Hank Shaw as modified by Pp:
Wash and dry your linkies after you pluck and draw them. Only then should you freeze them.
- Keep your linkies as cool and as separate as possible in the field. Use a game strap and hang them over poles rather than stuff them into sacks. Separate your linkies in the truck or put them in a cooler — do not get them wet!
- Hanging your linkies by the neck or feet does not matter, as several studies has shown.
- Hang the linkies between 50 to 55°F for at least three days, up to a week with an old mature one. Very mature linkies will have horny nails and feet that look like they have been walked on for quite some time. They will also have a stiff, heavy breastbones. Young linkies only need 3 days.
- Do not hang any linkies that have been gut-shot or are generally torn up by the dogs. Butcher these immediately and use them for a pot pie.
- Dry-pluck any linkie that has hung for more than 3 days.
