Amber was quite a character, a great crux woman but a little big headed too maybe? Unfortunately I believe she and her partner had financial difficulties due to the GFC, and she had health problems too. She has left us a legacy.

Having seen the article I referred to quite a few years ago and wondering why would anyone need to sweeten wine I did a little more research and found a very good article explaining exactly what took place. Romans were boiling unfermented grape juice to make sweetener for food flavoring. But found that by boiling it in lead lined kettles the mixture was even sweeter. Thus was born the 1st artificial sweetener, lead acetate caused by lead leaching into the mixture. But fear not ladies, a modern use of lead acetate and water is good to treat sore nipples. They used to water it down, too, I wonder just what Roman wine was like! I have some mulsum made in France (Gaul) which claims to be Roman wine, how close it is no one can really say.

It never surprises me what humans come up with and when, especially the Romans, inventive little devils as my ancestors found out when southern Italy was added to the Republic.

So we are actually talking about 2 different times in the process, you are talking about production and I am talking about the consumption part. They cut their wine with water as they were about to consume it much like we cut whiskey with soda or water today. SO they got a double shot of lead.
