Here are 2 types of folding sawhorses. They can be set up in seconds, and easily stored out of the way when not in use. One is the plywood variety that's easy to make for the DIY'er, and the other is a common manufactured one. Which ever you chose, I highly recommend adding a length of steel angle to the apex to make things a bit more interesting for the rider.

She appears to be missing out on the full experience of the horse. Her arms should be pulled up behind her high enough so she can really appreciate the ride.
